The ‘boring beetroot’ is no more. To bring out the best of this deliciously sweet and versatile veg, all you need is a little time, a little thyme and one last special ingredient beginning with ‘D’.

  • 1 whole beetroot
  • Salt
  • Sprig of thyme
  • 1 tbsp / 15g Dairygold

Instructions

Bring a large pot of salted water to the boil, then add your beetroot (which shouldn’t be peeled at this stage).

Cook for 20-25 minutes, or until tender.

When ready, allow the boiled beets to cool slightly, then peel off the skins. By now, they should come away easily. Once peeled, chop them into small chunks.

Next, melt a scoop of Dairygold in a frying pan.

Add the thyme and cook for a minute, before adding the beetroot.

Toss the beetroot in the pan until it’s coated in the melted Dairygold, for flavour you can’t beat!
