Ham & Cheese Frittata

- 2 tablespoons of Dairygold butter
- 8 cloves garlic (smashed)
- 1 shallot (sliced)
- 1 (8 ounce) fresh mushrooms
- 4 cups fresh spinnach
- 3/4 cup of cooked ham 9 eggs (Beaten)
- 1 Cup of shredded cheddar cheese
- Salt and ground black pepper to taste

A frittata is one of those easy peasy dishes that everyone can make, and can be served up at any time of day: brunch, lunch or dinner. Here’s our version, good old ham and cheese.

- 2 tablespoons of Dairygold butter
- 8 cloves garlic (smashed)
- 1 shallot (sliced)
- 1 (8 ounce) fresh mushrooms
- 4 cups fresh spinnach
- 3/4 cup of cooked ham 9 eggs (Beaten)
- 1 Cup of shredded cheddar cheese
- Salt and ground black pepper to taste
Instructions
Preheat oven to 350F/175C.
Melt the Dairygold in a large ovenproof skillet over a medium heat.
Add the garlic and shallot into the hot butter for approx 5 minutes until the shallot is softened.
Stir the mushrooms into the skillet, cook and stir for 10 minutes until the mushrooms begin to brown.
Stir the spinach into the mixture and cook for 5 minutes, stirring if necessary.
Add the ham and cook until ham begins to brown, about 5 minutes.
Now beat your eggs and then pour eggs evenly into skillet and cover.
Your mixture is now complete and you can add your skillet into the preheated oven until the frittata is set in the middle and lightly puffed up, about 25 minutes
Carefully remove the skillet and top with some cheddar cheese.
Leave to cool for five minutes and your delicious frittata is now ready to be served.
